Yes, you can stack elixirs in WoW Forever. There’s no Battle Elixir and Guardian Elixir split like the one in modern WoW, so you can drink several at once. Only flasks limit each other, and each drink starts a short 3 sec cooldown.
Blizzard’s word on stacking consumables
On the end-of-beta podcast, Blizzard contrasted Forever with modern WoW, where you have a Battle Elixir, a Guardian Elixir or a flask and that’s it. In Forever, you can “stack up with a million different consumables”.

On the beta, SimonizeShow TV listed Elixir of Fortitude, Elixir of Defense, Troll’s Blood Elixir, Elixir of Ogre’s Strength and Elixir of Agility together, on top of food, going into a boss at level 30.

Elixirs and flasks share one cooldown, so a long buff-up takes a few seconds per drink. Do it before the pull.
What we can’t confirm yet: two elixirs of the same stat
The client doesn’t hold the rule for this, because the servers decide which buffs replace each other. In Classic, a stronger elixir of the same kind replaced a weaker one, so plan on one elixir per stat until someone tests it on the live game. Don’t buy two Agility elixirs and expect both to count. We’ll add the answer here after launch.
How long elixirs last
Forever’s new elixirs last 30 min, and the Classic ones last 30 min or 1 hour, depending on the elixir. Two Classic elixirs were cut: Elixir of the Mongoose is now 30 min, and Elixir of Wisdom went to 30 min and 3 Intellect in the Oct 28 server changes. Flasks last 2 hours and, by their tooltips, persist through death.

The flask tooltips only limit flasks: 'You can only have the effect of one flask at a time.' Nothing in the data stops an elixir running beside a flask, but we haven't tested it on the live game yet.
